When life gives you lemons

You make lemon poppy seed muffins.

To be more accurate I was craving lemon poppy seed muffins so I went out and got myself some lemons, but that’s getting too nit-picky.

I’ve been really craving lemon poppy seed muffins ever since I bought one at the store and it was… fine. It had the lemon and the poppy seed but it was really dense and I swear I ended up eating half the muffin as crumbs because of how dry it was. I think I was half-way through eating the muffin when I stopped and thought to myself, “I could bake a better muffin than this,” and so I have.

The lemon poppy seed muffin recipe I ended up using was from Sally’s Baking Addiction, I’ve enjoyed their recipes before and decided that if they have good recipes or cakes and cupcakes I can probably trust them when it comes to muffins. The muffin was what I was hoping for, soft and light with a nice hint of lemon. I wish it was a little more moist, but that may have been from letting it stay in the oven a touch too long. I’m going to check my baking time and if that doesn’t make the change I’m hoping for, look at how to increase the moisture in the muffin.

The muffin recipe included an icing which I liked as it added a little extra sweetness to the muffins, but honestly they are good without the icing as well. The one thing I would say is that I ended up making a lot more icing than I used for the muffins. Whether that is because I didn’t use enough for the muffins or if it should be for more muffins than is provided by the recipe I am unsure. To be fair I personally wanted more muffins once I finished baking, so next time I may make a double batch.

On blog related news I know I dropped the ball last week but I do have plans to get the first friday fiction out this week, hopefully on Friday. We will see how that all goes!
